Well, this is our beautiful Christmas tree this year! I was so excited that it turned out so well. It has the pinecones on it that Oldest, Baby Girl and I picked up out of that guy's yard. It only has a few ornaments on it, some stips of ribbon weaved in and out here and there and all the white lights.

It snowed once, it can snow again!!

That's MY philosophy anyway. :) Last week we had snow, and some ice of course. You can't have snow in Texas without a healthy dose of ice to go with it. I was happy to see it coming down out there. I work in Dallas and have a long commute home so when I knew it was going to snow that day I stopped in our Allen location and worked from there. It's only an hour from the house, I don't have to hit the Dallas traffic and so it's just easier to get home from there when I know inclement weather is on its way. Plus I left as soon as it started sleeting so I didn't have to drive in the stuff.

I worked from home the rest of that day and all of the next day. It was great. I get a lot done when I work from home because I can deal with everything on my own timetable instead of being interrupted by the phone and the yahoo that comes to your desk and "hovers" until you acknowledge their presence.

The weekend was good but busy. It's that time of year and all so I like to get in the kitchen and play around with my cake decorating, bake cookies and work with my chocolate. I took a couple of cake decorating classes a couple of years ago and they were a lot of fun. But chocolate is my passion it seems.

I don't like cheesecake. I guess it tastes like something in has gone bad. It's got this tart taste that I don't particularly care for. However, I seen this great thing that one of the chefs on Food Network did and I wanted to give it a try. You buy an already made cheesecake. Use a melon baller or a mini ice cream scooper. The kind with the thumb handle on it so you can get the scoops nice and round. You scoop out balls of cheesecake and put them on a cookie sheet or something. Then put lollipop sticks in them. Put them in the fridge or freezer so they "set up" really good and firm and then dip them in melted chocolate. Then you can dip them into things like nuts, crushed graham crackers, sprinkles, coconut or whatever. Anyway, they were really good. Like I said, I don't care for cheesecake but anything dipped in chocolate has a better flavor. Plus I use and amaaaaaaaaaazing chocolate. It's made by Guitard. I have to buy it in Richardson but it's worth the trip if I have to come down on my day off. Normally I pass right by the store that sells it on my way to and from work so I can just stop off and get it.

So, I made that stuff and then I baked a turkey breast and homemade cornbread dressing. I don't normally make dressing because I don't know how but my mom came over and now I'm educated!! And it turned out INCREDIBLE!!

I also made some peppermint bark. This is melted white chocolate, smashed up candy canes, mix them up and spread it out thin onto a cookie sheet covered with parchment paper. I stick it in the freezer for a few minutes to make it set up and then break it up like you would with peanut brittle. Again the Guitard chocolate is very creamy and tastes so good. I brought a tin of that to work with me.

Then there was the Cowboy game. We squeaked through another one. I swear I have more grey hair this season from their closer than close games. This coming up Redskins game will be a nailbiter for sure. The last time we met up with them we had it in the bag until the last few minutes of the game. Maybe that's why we ended up losing; cause we thought we had it in the bag. Hmmmmmmm.

The Survivor finale and reunion show was my next notable activity. I wanted Stephanie to win so naturally she didn't. I can't believe those idiots thought Dani played a better game than Stephanie did. It just blows my mind! Then on the reunion show she looked like she had on too much make-up and a botox treatment on her lips! It drives me crazy.

So that was my weekend. Now it's time to get ready for the holidays. Thursday at 5 pm starts my 2 week vacation!!! I have short timers disease now and don't wanna work but I'm making myself anyway. It makes the time pass faster. :)
